~Monday Magic ~Cookie Dough Magic Cookie Bars……O-M-G!
Well, it’s Monday and even though Monday’s can be, well, hard to take, the first day of sunshine for weeks along with some MAGIC makes this day the very best first day of spring
You have the Dancing Daughter to blame thank for these ridiculous Magic Cookie Bars. Whilst perusing recipes from another evil amazing blogger, The Domestic Rebel, I got a facebook message from Chelsea imploring me to make these for her. Granted, to make them gluten free is much more work than the glutinous, ready made solution from The Domestic Rebel, but the extra effort is SOOOOO worth it. When I cut them last night I heard two “OMG’s” from the Six Foot Teenager and the lovely girlfriend and a “Holy Crap” from the Dancing Daughter. Dear Hubby was just plain quiet and eating in delight.
So while they may be a bit labourious, you can make the cookies and the cookie dough ahead of time and then you can make them up at your leisure. Some people call these type of bars Sevel Layer Bars, my Mom calls them Hello Dolly Bars, but I’ve always called mine Magic Cookie Bars. Now Monday is only Magic due to Cookie Dough Magic Cookie Bars.
Cookie Dough Magic Cookie Bars ~Yields 24 squares
Based on the recipe from The Domestic Rebel
1 box gluten free yellow cake mix (a large one, use the icing mixture as well if included)
½ cup oil
2 eggs
¼ cup brown sugar
1 x batch of frozen ready to roll gluten free chocolate chip cookie dough, home made ,
About 15 gluten free chewy chocolate chip cookies, roughly chopped
1 & ½ rows of gluten free “chocolate” sandwich (Oreo style) cookies (I used Glutino)
1 & ½ rows of gluten free “vanilla” sandwich (Oreo style) cookies (I used Glutino)
⅓ cup chocolate chips or melts
⅓ cup white chocolate chips or melts
1 x can sweetened condensed milk
Preheat the oven to 170°. Line a 13×9″ baking pan with foil or baking paper, extending the sides of the foil over the edges of the pan. Spray the foil with cooking spray and set aside.
In a large bowl, combine the cake mix, oil, eggs and brown sugar with a rubber spatula until a soft dough has formed.
Press the dough evenly into the prepared pan and bake for 10 minutes.
Top the par-baked base evenly with the cookie dough, chocolate chip cookies, Oreos, chocolate & white chocolate chips.
Drizzle evenly with the can of sweetened condensed milk and return to the oven to bake for 15- 20 minutes, or until the centre appears set and the top is golden brown and bubbly.
Do not overcook or they will be hard and crumbly.
Allow the bars to come to room temperature and cool completely before cutting into squares.
Serve warm or room temperature, bare or topped with ice cream! These keep well at room temperature when stored airtight, up to one week. (fat chance them lasting one week in my house!)
